We support the local farmers in our community and source all of our ingredients from right here in Charlotte.

hi, i’m lizzy.

I really love that you are eating my bread. Or cookies. Any of it really. I am probably one of the nerdiest individuals on this planet when it comes to getting my grains + breads + pastries just right but I hope you get to experience all of the love that’s baked into every last baked good. 

I feel so privileged to get to bake for all of you knowing your bellies will be filled with so much life when you eat it! Bread is meant to be broken with the ones you love and that is my hope for all of you. 

The word “Companion” means those who break bread together. 

So with that in mind…let’s!

I hate secrets and that’s why I bake the way I do. Every ingredient I use is mindfully sourced to ensure what you are eating is real food. From locally sourced grains and fruits to happy A2 cow dairy products, I promise to never scrimp on your butter calories; just know it will be the best quality butter I can get my hands on!

process.

Thanks to our friend Steve (my very old starter), all of our breads and croissants are naturally leavened. Depending on the product, our goods are fermented from 24-72 hours to both develop our flavours and to increase digestibility for all of our bellies. Gluten really isn’t the enemy! This is why our pre-order schedule is the way it is. Our first day of production is milling, followed by a day making a variety of doughs. Then we let the doughs ferment to ensure each bread product is full of the utmost nourishment. Then we bake.
